Description

The Unox XB693 is a BAKERLUX™ electric convection pastry oven with humidity, designed for professional bakeries, pastry shops, restaurants and hotels that demand consistent, high-volume baking results. Drawing 15.5 kW, it holds 6 trays at 600×400 mm and covers a working temperature range of 80 °C to 260 °C, making it equally suited to delicate Danish pastries and high-heat bread crusts.

Humidity control is handled by STEAM.Plus, which delivers instant steam at any point from 48 °C right up to maximum temperature, while DRY.Plus actively expels moist air from the chamber when a drier finish is needed. AIR.Plus multi-fan technology runs at two selectable speeds with reversing airflow, promoting even heat distribution across all six tray positions. An integrated drip collection system in the door prevents condensate from reaching the floor, and continues working even with the door open — a practical detail on a busy production line.

The interior is fully AISI 304 stainless steel with rounded edges for fast, thorough cleaning, lit by LED lights embedded in the door glass. Analogue knob controls keep operation straightforward for any team member, and the countertop or free-standing footprint fits standard bakery or prep-kitchen layouts. The XB693 also accepts GN 1/1 trays, adding flexibility for operations that run mixed formats.
