Description

The Smeg ALFA1035EHDS is a professional electric convection oven with humidification, designed for high-volume pastry and bakery production in restaurants, hotels, and catering operations. Running on 16 kW at 400 V three-phase, it holds 10 trays in EN 600×400 mm or GN 1/1 format across a 199.1-litre stainless steel interior, with a temperature range of 30–270 °C to cover everything from delicate proving to intensive baking.

Three contra-rotating fans with timed direction reversal and double-speed control ensure even heat distribution across all 10 levels. The integrated humidification system — with five steam-assisted levels plus manual mode on each fan — gives bakers precise moisture control for crusts, croissants, and enriched doughs. The electronic controller stores up to 100 recipes, supports three programmable cooking steps with pre-heating, and includes a USB port for recipe transfer and HACCP data logging with scheduled-start capability.

A core temperature probe with delta-T cooking, heating element cut-off on door open, and three halogen lights that activate automatically make this oven equally suited to precision pastry work and high-throughput production kitchens. The ALFA1035EHDS ships with a left-hand door hinge as standard; the right-hand hinge variant is available as ALFA1035EHDSR. Compatible with the Smeg Condense Hood K4610X for ventless installation.
