The Josper HJX-PRO-M120 is a professional charcoal grill-oven — a closed barbecue design that combines grill and oven functions in a single charcoal-only unit — sized for high-volume kitchens serving around 120 covers. Running purely on charcoal, it reaches temperatures between 250 °C and 350 °C and delivers approximately 90 kg of grilled product per hour, making it a practical fit for steakhouses, hotel restaurants, and large à la carte operations that demand consistent, live-fire results at scale.
A single charcoal load sustains up to 9 hours of service, with daily fuel consumption of 12–16 kg and a preheat time of roughly 35 minutes — figures that translate directly into predictable kitchen scheduling. Temperature is managed through a vent system and front-opening door, giving the cook precise, hands-on control without electronic components. The unit accommodates multiple grilling levels, with each rack accepting 2 × GN 1/1 pans, and is designed to be installed at a working height of 65 cm.
