Description

The Imperia Restaurant Manuale is a semi-professional manual pasta sheeter made in Italy, designed for restaurants, trattorias, hotels and catering kitchens that produce fresh pasta by hand. Built from chromium-plated steel with hardened-steel precision gears and self-lubricating bearings, it delivers consistent sheet quality across a full working shift without relying on a motor.

The 220 mm rollers produce sheets up to 210 mm wide across 10 numbered thickness positions, giving pasta cooks repeatable control from thick lasagne sheets down to near-translucent dough. The patented Tiger clamp fixes the machine securely to any work surface, and Imperia's patented regulator knob keeps the chosen gap locked under load. Optional Simplex cutter attachments — covering formats from 1.5 mm capelli d'angelo to 4 mm trenette — are sold separately, letting kitchens expand the range as their menu grows.
