The Unox XEVC-0621-GPRM is a gas combi oven from the CHEFTOP MIND.Maps™ PLUS series, designed for high-volume professional kitchens in restaurants, hotels, and catering operations. It handles 6x GN 2/1 trays (650×530 mm) in a countertop footprint, combining convection and steam cooking across a 30–260 °C range with 24 kW gas power.

Humidity is managed by the CLIMALUX system, allowing adjustment in 10% increments with STEAM.Maxi injection and DRY.Maxi forced extraction for precise control across cooking modes. The 4-speed auto-reversing fan with pulse function ensures even heat distribution, while the 4-sensor multipoint core probe with Delta-T cooking delivers consistent results on dense loads. Over 1,000 CHEFUNOX preset programs and up to 48 custom MIND.Maps™ sequences — each with up to 9 cooking steps — are navigated via a 9.5-inch touch panel, and Wi-Fi, Ethernet, and USB connectivity support HACCP logging and program management.

The ROTOR.Klean automatic washing system with SENSE.Klean intelligence and a built-in detergent-and-rinse tank keeps the AISI 304 interior clean with minimal operator involvement — a practical advantage in fast-paced operations where downtime matters.
