Tecna Multipurpose Knife, Microserrated Edge TT90014G, 14 cm, Green

The Tecna Multipurpose Knife TT90014G from Ambrogio Sanelli is a professional kitchen knife with a 14 cm (5½") microserrated blade and a green HACCP handle for fruit and vegetable prep in restaurant kitchens, catering operations, hotels and cafes. The fine serration keeps the edge biting through skins, and colour-coding the knife to produce keeps it separate from tools used on raw meat, cooked food or fish.

The blade is NITRO-B nitrogen stainless steel (1.4916) with a semi-polished finish, and every piece receives a laser-controlled final sharpening for a long-lasting edge. The green handle combines a rigid polypropylene core, bonded to the steel tang, with a softer SEBS outer layer moulded with microspheres that reduce slipperiness and improve grip. In the HACCP colour system green is the colour for fruit and vegetables, and all materials are non-toxic, sterilisable and dishwasher safe.

The same model is also made with a black handle outside the HACCP colour system, and Ambrogio Sanelli has designed and made professional knives in Italy since 1864.
