Tecna Salmon Slicer, Granton Edge TA56032L, 32 cm, Blue

The Tecna Colore Salmon Slicer TA56032L from Ambrogio Sanelli is a professional slicing knife with a 32 cm (12½") granton-edge blade and a blue HACCP handle, for slicing salmon and other fish in fishmongers, delicatessens and professional kitchens. In the HACCP colour system blue is the colour for fish and seafood, so the knife stays separate from tools used on raw meat, cooked food or vegetables.

The blade is NITRO-B nitrogen stainless steel (1.4916) with a semi-polished finish, and every piece receives a laser-controlled final sharpening for a long-lasting edge. The blue handle has a rigid polypropylene core bonded to the steel tang with a soft SEBS outer layer and anti-slip microspheres for grip, and it is dishwasher safe and sterilisable.

The same model is also made with a 28 cm blade and a black handle, and it complies with current EU food safety and hygiene regulations. Ambrogio Sanelli has made professional knives in Italy since 1864.
