Description

The Tecna Salmon Slicer TA56028B from Ambrogio Sanelli is a professional slicing knife with a 28 cm (11") granton-edge blade, for slicing salmon and other fish in fishmongers, delicatessens and professional kitchens. The hollows ground into the blade reduce friction so slices release cleanly from the steel.

The blade is NITRO-B nitrogen stainless steel (1.4916) with a semi-polished finish, and every piece receives a laser-controlled final sharpening for a long-lasting edge. The black handle has a rigid polypropylene core bonded to the steel tang with a soft SEBS outer layer and anti-slip microspheres for grip, and it is dishwasher safe and sterilisable.

The same model is also made with a 32 cm blade and a blue HACCP handle for fish and seafood, and it complies with current EU food safety and hygiene regulations. Ambrogio Sanelli has made professional knives in Italy since 1864.
