Description
The Sirman Katana 20 is a 20-litre horizontal bowl cutter for professional meat and food processing, running on a single-phase 230 V supply via an integrated inverter that drives a ventilated asynchronous three-phase motor rated at 2.387 kW (3.25 HP). Continuously variable blade speed from 600 to 2600 RPM gives chefs and production teams precise control over texture — from coarse chopping to fine emulsification — making it well suited to butchery operations, hotel kitchens, catering production facilities and delicatessen manufacturers.
The machine is built throughout in AISI 304 stainless steel, with a lid combining a stainless steel frame and a high-resistance Kepital hood, and IP 67-rated controls that withstand intensive washdown. The standard three-blade configuration (convertible to two) accepts sharp, blunted, serrated or unsharpened hubs, with dedicated knives available for specialist applications, and the shaft carries maximum protection against liquid ingress — a clear advantage in high-throughput wet environments.
