The Sanelli Ambrogio Sharpening Whetstone 220/1000 is a dual-sided water whetstone for professional knife maintenance, combining a 220-grit coarse face for chip correction and edge restoration with a 1000-grit fine face for initial sharpening of standard knife blades. The abrasive material is sourced from Naniwa Abrasive (Japan), Basic Stone line — a benchmark in whetstone manufacturing.
Soak the stone for around 10 minutes before use and work blades at a 10–20° angle; the method suits all knife types, scissors and general cutting tools, making it equally practical for a hotel kitchen brigade or a busy restaurant prep station. The stone ships in a plastic case that doubles as a non-slip holder, so it stays stable on the bench during use — no extra stand required.
