The Sanelli Ambrogio Sharpening Whetstone 1000/3000 (SKU 1901.000) is a dual-grit combination water stone from the Naniwa Basic Stone series, designed for restoring and refining the edges of kitchen, butchery, and fish-prep knives in professional kitchens, restaurants, and hotel F&B operations. The coarser 1000-grit face removes chips and resets damaged edges, while the 3000-grit face refines and smooths the bevel — covering the two most practical stages of knife maintenance on a single stone.

The abrasive is aluminium oxide (corundum) at 99.99% purity, manufactured by Naniwa Abrasive in Japan — a specialist with over 80 years in precision abrasives — and sintered at 1200 °C for consistent cutting action and long service life. Before use, soak the stone in water to activate the abrasive surface, then sharpen at 10–20 degrees for optimal results. The stone ships with a plastic holder that doubles as a non-slip base, keeping the stone steady on the bench during service prep.

Suited to chefs and knife technicians who need a reliable, compact sharpening solution for kitchen knives, butchery blades, and peeling accessories. Rinse after use, flatten the surface periodically, and store at approximately 20 °C — dishwasher use is not recommended.
