The Sanelli Ambrogio Yanagi is a professional Japanese-style sashimi knife from the Hasaki line, featuring a 240 mm single-bevel blade ground in the Eastern tradition for clean, pull-cut slicing of raw fish and delicate proteins. The blade is drop-forged from a single piece of Nitro-B X50CrMoV15 nitrogen-enriched stainless steel, hardened to 57–59 HRC, delivering lasting edge retention with the corrosion resistance essential in wet professional kitchens.
The full-tang construction is paired with a riveted black POM handle, providing a secure, hygienic grip during long service periods. Manufactured in Premana, Italy — a town with centuries of blade-making heritage — and certified to UNI EN ISO 9001:2008, each knife carries a laser-printed product code and batch number for full traceability. Dishwasher-safe construction suits the hygiene demands of high-throughput operations.
