Tecna Sticking Knife TD15016R, 16 cm, Red

The Tecna Sticking Knife TD15016R is a professional sticking knife with a 16 cm (6¼”) pointed blade for the sticking cut and initial opening on carcasses in butcheries and meat-processing rooms. The narrow, pointed tip is built for a single deep, controlled thrust.

The blade is NITRO-B nitrogen stainless steel (1.4916) with a semi-polished finish, and every piece receives a laser-controlled final sharpening for a long-lasting edge. The handle is dual-injection: a rigid polypropylene core bonded to the steel tang, with a soft SEBS outer layer textured with microspheres that reduce slipping and improve grip. All materials are non-toxic, dishwasher safe and sterilisable, and resist high temperatures without losing shape. In the HACCP colour system red is the colour for raw meat, so the knife stays separate from tools used on other foods.

The same model is also made with a yellow handle, and with an 18 cm blade. Designed and made in Italy by Ambrogio Sanelli, professional knife makers since 1864.
