Tecna Colore Santoku Knife, Granton Edge TC50020R, 20 cm, Red

The Tecna Colore Santoku Knife TC50020R from Ambrogio Sanelli is a professional Santoku knife with a 20 cm (8") granton-edge blade, 5.4 cm deep at the heel, for chopping, slicing and dicing raw meat in professional kitchens, butcheries and catering operations. The granton edge, the row of hollows ground along the blade, reduces friction so food releases from the steel, and the wide, straight Santoku profile suits fast rocking or push cuts.

The blade is NITRO-B nitrogen stainless steel (1.4916) with a semi-polished finish, and every piece receives a laser-controlled final sharpening for a long-lasting edge. The dual-injection handle has a rigid, non-deformable polypropylene core bonded to the steel tang and a softer red SEBS outer layer with microspheres that cut down on slipperiness and improve grip. In the HACCP colour system red is the colour for raw meat, so the knife stays separate from tools used on cooked food, fish or vegetables. All materials are non-toxic, sterilisable, dishwasher safe and resistant to extreme temperatures.

The same Santoku shape is also made with a 20 cm blade in green, and with an 18 cm blade in black, blue, green and red handles.
