Description
The Tecna Chef's Knife TC47024G from Ambrogio Sanelli is a professional chef's knife with a 24 cm (9½") blade, 5.6 cm deep at the heel, ground with a granton edge: the hollows along the blade reduce friction so slices of meat, fish and vegetables release cleanly from the steel. It is an all-round knife for chopping, slicing and dicing in professional kitchens.
The blade is NITRO-B nitrogen stainless steel (1.4916) with a semi-polished finish, and every piece receives a laser-controlled final sharpening for a long-lasting edge. The green dual-injection handle combines a rigid polypropylene core bonded to the steel tang with a soft SEBS outer layer moulded with microspheres to reduce slipperiness and improve grip. In the HACCP colour system green is the colour for fruit and vegetables, so the knife stays separate from tools used on raw meat, fish or cooked food.
The same model is also made with black and blue handles, and Ambrogio Sanelli has been making professional knives in Italy since 1864.
