The Supra Santoku Knife SC50018L from Ambrogio Sanelli is a professional Santoku-style kitchen knife with an 18 cm (7") granton-edge blade, 4.7 cm deep, and a blue HACCP handle for fish and seafood preparation. It suits restaurant, catering and hotel kitchens where food processing areas need to stay separated by task.

The blade is NITRO-B nitrogen stainless steel (1.4916) with a semi-polished finish, and every piece receives a laser-controlled final sharpening for a long-lasting edge. The granton edge, the row of hollows along the blade, reduces friction so slices release from the steel instead of sticking. The blue SEBS handle is ergonomic and anti-slip, contains an antibacterial additive and has a smooth guard for better hygiene. In the HACCP colour system blue is the colour for fish and seafood, so the knife stays separate from tools used on raw meat, cooked meat, vegetables or bakery products.

All materials are sterilisable and resistant to corrosion and high temperatures, and the knife complies with current food safety and hygiene regulations.
