Description

The Supra Dough Scoring Tool ST30010B from Ambrogio Sanelli is a micro-serrated dough scorer with a 10 cm (4") stainless steel blade, serrated on both sides for fast, precise movements. Bakers use it to score the surface of leavened dough before baking, a cut that improves oven spring and the texture of the crust.

The blade is NITRO-B nitrogen stainless steel (1.4916), the material used across the Supra range. The black SEBS handle is anti-slip, contains an antibacterial additive and is sterilisable, and the tool is made in Premana, Italy, by Ambrogio Sanelli, professional knife makers since 1864.
