Description
The Sanelli Ambrogio Oval Sharpening Steel (ref. 116630) is a 30 cm professional honing steel from the Premana Professional line, built for daily edge maintenance in restaurant kitchens, hotel brigades and catering operations. The hardened steel rod's oval cross-section contacts a wider surface of the blade on each stroke, realigning the edge faster than a round rod — a practical advantage during busy service.
The green double-moulded handle is non-slip by design and incorporates Biomaster antibacterial additive using silver ions, certified to ISO 22196 — a meaningful hygiene benefit in shared professional kitchens. Ergonomics were developed in partnership with the EPM unit at Politecnico di Milano, reducing hand fatigue during repetitive sharpening tasks. Made in Premana, Italy, by a cutlery house founded in 1863.
