Description

The Hexagon Yanagiba Sashimi Knife XJ41027C from Ambrogio Sanelli has a 27 cm (10½") blade with an asymmetric profile and a single edge sharpening, in the Japanese tradition, for slicing sashimi with a long, progressive draw of the blade in a professional kitchen.

The blade is special nitrogen stainless steel with a semi-polished finish, and Ambrogio Sanelli laser-prints the logo and batch information directly onto the steel for traceability. The hexagonal handle is Maple wood, with the tang set into thermo-treated beech wood for a secure, comfortable grip.

The same Yanagiba is also made with 21 cm, 24 cm and 30 cm blades. Ambrogio Sanelli has designed and made professional knives in Italy since 1864, and the Hexagon range also includes single-edge Usuba and Deba knives and a double-edge Oriental knife, Nakiri and Santoku.
