Description

The Hasaki Chef Knife HC49020B from Ambrogio Sanelli is a Japanese-style chef's knife with a 20 cm blade, the longer option in the same model as HC49016B, for restaurant, catering and hotel kitchens that need more reach on the board. The blade is sharpened on one side only, in the Japanese tradition, so food releases from the steel with less friction and drag.

The blade is NITRO-B nitrogen stainless steel (1.4916), chosen for its uniform microstructure and resistance to corrosion, with a satin finish. The one-sided grind is the same technique Sanelli uses across the Hasaki range for long, progressive cuts. The handle is synthetic acetal resin (POM), comfortable to hold and dishwasher safe, and the blade carries a laser-printed logo and product code for traceability.

The same Hasaki chef's knife model from Ambrogio Sanelli is also made as HC49016B, a shorter version for cooks who prefer a more compact blade while keeping the same one-sided Japanese grind.
