The Sanelli Ambrogio Ham Boner is a professional ham boning knife with a 210 mm blade, designed for precision deboning of ham and prosciutto in high-volume HoReCa kitchens. The blade is forged from Nitro-B nitrogen-enriched stainless steel (grade 1.4916), hardened to 57 HRC, and finished with laser-controlled final sharpening — delivering a consistent, long-lasting edge suited to daily production use.

The black SEBS elastomer handle contains an antibacterial agent injected directly into the material, meeting the hygiene demands of professional food preparation environments. Smooth guard contours eliminate crevices where bacteria can accumulate, and the knife is both dishwasher-safe and sterilizable. Made in Premana, Valsassina, Italy, by a manufacturer with a craft history dating to 1863, this knife is a reliable tool for butchers, charcuterie specialists, and professional kitchen brigades in restaurants, hotels, and catering operations.
