The Ambrogio Sanelli Hasaki Chef Knife (16 cm) is a Japanese-style professional chef knife with a 160 mm satin-finish blade, designed for high-volume kitchen work in restaurants, hotels, and catering operations. The blade is forged from NITRO-B stainless steel (grade 1.4916) — a nitrogen-enriched alloy hardened to 57–59 HRC — delivering exceptional edge retention and resistance to corrosion under daily professional use.

Sharpening follows Japanese single-sided tradition, with each knife receiving a final laser-controlled edge inspection for consistent, precise cutting performance straight out of the box. The ergonomic SEB-S bi-material handle in acetal resin (POM) is sterilisable and available in HACCP color-coded variants, making it practical for kitchens operating strict allergen and cross-contamination protocols. Every blade carries a laser-printed product code and batch number for full traceability — a detail that matters during audits and inspections.
