Description
The Pavesi Forni RPM 140 is a traditional wood-fired floor pizza oven for high-volume pizzerias, restaurants and hotels, capable of producing over 100 pizzas per hour from a 1400 × 1350 mm cooking surface. The monoblock auto-dilating refractory chamber and circular dome — with walls up to 100 mm thick — retain and distribute heat evenly, while the single refractory block hearth (70 mm thick, approximately 250 kg) delivers the consistent base temperature that Neapolitan-style pizza demands.
Insulation is built for sustained performance: microporous panels at the base and a kaolin blanket around the dome minimise heat loss and reduce wood consumption during long service shifts. For operations that need added flexibility, the RPM 140 can be converted to gas firing via the optional Avanzini electronically managed burner accessory, without compromising the authentic wood-fired character of the oven.
Weighing 1250 kg, this is a permanent installation suited to dedicated pizza kitchens where throughput and heat retention are non-negotiable. It suits high-traffic pizzerias, hotel restaurants and catering venues that require a reliable, professionally specified wood-fired oven as the centrepiece of their operation.
