Description
The Pavesi Forni RPM 120 is a traditional wood-fired professional pizza oven for pizzerias and restaurants, built as a 1,100 kg monoblock refractory structure capable of baking five 30 cm pizzas simultaneously. Its auto-dilating refractory dome, 8–10 cm thick and insulated with a kaolin blanket, retains heat efficiently across long service periods, while 15 cm microporous base panels minimise heat loss through the floor. An electronically managed Avanzini gas burner is available as an optional add-on for mixed-fuel operation.
The 7 cm thick single-piece refractory cement hearth — weighing around 250 kg on its own — provides a stable, even baking surface at a working height of 122 cm from the ground, with 42 cm of clearance to the dome. The oven's exterior surface stays at ambient room temperature, making it straightforward to clad with ceramic tile, glass, brick or plasterboard using standard adhesives — a practical advantage for fit-out teams working to a specific interior brief.
Sized for a 1,200 × 1,150 mm internal chamber and matched by Pavesi Forni to venues seating up to 40–50 covers, the RPM 120 suits independent pizzerias, restaurant kitchens and hotel dining operations where authentic wood-fired output and robust, low-maintenance construction are priorities.
