The Sanelli Ambrogio Supra Nero sticking knife (Coltello scannare) is a professional 160 mm butchery knife designed for slaughterhouse and meat-processing environments, built from NITRO-B nitrogen stainless steel (1.4916) — the same Bonpertuis conical steel specified for high-performance cutlery. The satin-finished blade undergoes piece-by-piece final sharpening with laser profile control, ensuring consistent geometry across every unit.
The black SEBS handle is ergonomic, non-slip, non-toxic and abrasion-resistant, meeting HACCP hygiene requirements at the blade-handle junction. Laser marking provides a permanent, readable product code for traceability in professional kitchens, butcheries and hotel back-of-house operations. Made in Italy.
