The Sanelli Ambrogio Supra Skinning Knife is a professional 160 mm skinning knife made in Italy for butchers and professional kitchen teams. Manufactured in Premana — Italy's historic blade-making centre — by a company founded in 1863, it is built to the tolerances that high-volume meat preparation demands.
The blade is forged from NITRO-B steel (grade 1.4916), a nitrogen-enriched stainless alloy chosen for its edge retention and corrosion resistance. The black SEBS thermoplastic elastomer handle provides a secure, non-slip grip during wet or fatty work, and the knife is dishwasher safe, meeting EU food hygiene regulations — a practical advantage in busy production kitchens.
