Description

The Unox BAKERLUX 10 is a 10-tray electric combi oven for professional bakery and pastry operations, combining convection, steam and combination modes across a temperature range of 30 °C to 260 °C. Drawing 14.9 kW on a three-phase supply, it accepts ten 600×400 mm baking trays at 80 mm pitch and handles everything from delicate steam-leavened bread to high-heat roasting, dehydrating, sous vide and plated regeneration — all within a single cabinet.

Control is handled through the 9.5" MIND.Maps™ touch interface, which stores up to 256 user programs with as many as 9 sequential cooking steps each. The CLIMA.Control system adjusts humidity in 10% increments, while boilerless STEAM.Maxi direct injection and DRY.Maxi forced extraction give precise moisture management throughout the bake. The CHEFUNOX cloud platform lets operators manage recipes and monitor HACCP data remotely via built-in WiFi or USB, making consistent results achievable without a specialist operator on every shift.

Built entirely in stainless steel and fitted with the ROTOR.Klean four-program automatic wash system and an integrated detergent tank, the BAKERLUX 10 is designed for high-volume bakeries, hotel kitchens, patisseries and catering operations that demand output, hygiene and process control in a compact footprint.
