The Sanelli Ambrogio Deba (H340.016) is a professional Japanese-style Deba knife from the Hasaki line, designed for fish filleting, butchering, and slicing soft meat, with a 160 mm single-bevel blade ground on one side in the traditional Japanese manner. The blade is forged from nitrogen-enriched X50CrMoV15 stainless steel and hardened to 57–59 HRC, delivering edge retention and corrosion resistance that stand up to continuous fish prep in professional kitchens.

The riveted black POM handle offers a secure, non-slip grip during wet work — a practical detail for sushi chefs, fishmongers, and seafood-focused restaurant kitchens alike.
