The Sanelli Ambrogio Supra boning knife is a professional 130 mm curved stiff-blade knife designed for precise removal of bones from poultry, meat and fish — a reliable daily-use tool for restaurant kitchens, hotel brigades and butchery operations. The blade is forged from Nitro-B nitrogen stainless steel (grade 1.4916), finished to a satin polish and sharpened using laser profile control with a handcrafting touch on each individual blade, delivering consistent edge geometry and long-lasting sharpness.

Part of the Supra Colore HACCP line, the knife features a red SEBS handle that is ergonomic, non-slip and abrasion-resistant — supporting colour-coded food hygiene protocols required in professional EU-compliant kitchens. It is dishwasher safe and fully compliant with EU food hygiene regulations. Made in Italy.
